  • We are at the half way point and how is your Plastic Free July going? We have been surprised at the amount of plastic that comes in the mail and in food packaging. It’s really hard to avoid all plastic but don’t get discouraged!
It may seem like using a reusable water bottle instead of plastic water bottles is low hanging fruit, but one reusable water bottle can potentially replace 1460 plastic water bottles a year, and collectively that is huge! Keep up the great work Sea Huggers!

  • Ever inspiring, calling us all to WAKE UP and make changes NOW, not later... @DominiqueCrenn challenges us all to post one change we will make for sustainability and to fight climate change when we go home today. And to encourage our Food Industry to lead the way boldly in change as time is short. 
I am sporadically good about bringing a bottle or mug with me for water or coffee. Just like I long ago trained myself to have a canvas bag with me always when San Francisco (and eventually, much more recently, California) outlawed plastic bags years ago, I know I can change to have a bottle in my bag all the time (and a back-up in the car, as I do with bags). I commit to this change now. 
What about you? Other “do it now” ideas in our daily life and food/drink businesses?

  • Salt & Vinegar Chips, amirite? 😉

I’ve always loved Salt & Vinegar Chips, I mean, love them so much, ya girl ain’t afraid to eat a whole bag in one sitting. Those were the days. 
Ever since moving towards a low waste lifestyle, I have found myself thinking more creatively about how I can use less waste to get basically the same result for different things. So bing, bang, boom. I found a handy little recipe online and taught myself how to make homemade Salt & Vinegar Chips.

Salt and Vinegar Potato Chips:
Prep Time: 15 mins
Cook Time: 30 mins
Total Time: 45 mins

Ingredients: •	3 Idaho Russet Potatoes •	1/2 cup apple cider vinegar •	1/4 cup sea salt •	oil for frying

Instructions: 
1. Thinly slice the potatoes on a mandoline
2. Transfer the potatoes to a large bowl and pour the vinegar over them.
3. Toss the potatoes with the vinegar to coat and allow to stand for 1-2 hours.
4. Drain the potatoes and spread out on a baking sheet lined with paper towels to allow to dry.
5. Heat about 1-2 inches of oil in a large pot over medium heat.
6. Drop in one potato slice to test the oil. If the potato begins to sizzle, the oil is ready. If not, wait another 2-3 minutes.
7. Drop in 4-5 slices of potato into the oil and cook for 1-2 minutes. Flip the potatoes over and continue to cook for another minute or until golden brown and crispy.
8. Transfer the potato slices to a plate or baking sheet lined with paper towels and immediately sprinkle with sea salt.
9. Serve immediately.

2️⃣Farming is hard work. Climate change is making it harder. The people I met in The Gambia, like these fishermen, aren’t waiting around for help. Far from it. But if governments in rich countries like the US are going to pitch in, and they urgently need to, we need to make sure these efforts *support* communities – not hinder or distract or undermine.✊

  • Looking fresh and green after a brief downpour that dropped 1.75” of rain around dinnertime last night. Flash flooding is the new normal here, and we have noticed more frequent deluges in the past five or six years. Like 3 or more inches in a few hours is very common these days. The garden, luckily, drains well as it’s situated on a slope with some well-amended soil, and so it is quite resilient to these changing times, this wild ride that is climate change. I am always amazed at how strong plants are, their drive to mature and reproduce, and it is their deeply rooted strength that I often lean on in these downright frightening times as the natural world is yelling and pleading so loud and clear that enough is enough. I know the plants will carry on with or without me, and I dip into their innate knowing to keep myself going when my anxiety skyrockets, which it does when I sit with the state of things for any amount of time. Growing our own food is a small contribution to the healing that is needed in the world. Spending time cultivating this space will always be one of my strongest allies for my mental health and well-being.
