The foremost challenge that our country and the world is facing is the water crisis and the shortfall of drinking water. Food & beverage outlets can all make a little difference by implementing the policy of “Glass Half Full” in their outlets and as customers we need to be more aware and could only request for what we need.
Please spread the word, repost and do whatever it takes to the make the difference.
The biggest example is to whats happening in Chennai & rest of the cities are not far away. We are the only generation that can make the difference. Climate change is real & something we need to take very seriously.

  • Simple, wholesome and oh-so-comforting. Kichidi, one pot rice and lentil porridge thing-y that we Indians run to when one is running out of ideas to cook or feeling homesick or looking for comfort food or like in my case, recovering from rather a long spell of illness. .

A tadka of whole warm spices in hot oil or ghee followed by a spoonful of earthy cumin seeds, a generous pinch or two of hing and few curry leaves. Thinly sliced onions fried until golden before tipping in soaked rice and lentils (mung or toor dal) in equal portions along with 3 measures of water. A thumb sized chopped ginger to aid digestion and golden turmeric to ward off dark spells, a sprinkle of garam masala for flavour and salt to taste is all that is needed. Pressure cooked for 3-4 whistles until the rice and lentils cook down to soft mash easy enough to swallow. Serve it with pickle, papad, ghee or yogurt. In my case, pan fried green plantain roast covered in spicy sesame and kopra (dry coconut) masala until crisp from outside and soft inside, simple salad and a spoonful of Bombay mixture for added texture.

  • Savoured the delicate White Fish Amarillo Carpaccio at HO. PREPARATION: The fresh Sea Bass (White Fish) was sliced ultra thin and layered with Peruvian bell peppers, Amarillo radish and European herbs. The star, however, was the centrepiece; a baked parmesan crisp roll, firmly grasping fresh purple lettuce. In fine, the Carpaccio was drizzled with olive oil, a creamy leek and spicy citrus vinaigrette that pretty much soaks white fish in its richness. A kinetic combination, I'd say! TASTE: All in all, the parmesan with purple lettuce knocks up the salad-ish flavours, while, the mouth-melting slices of fish evince a flavoursome blend of acidic juice and European spices. On the other hand, the Peruvian bell pepper and the radish seamlessly seem to balance the sweetness and the spiciness.
