These are the type of recipes I choose to include in our @hellofreshau box. We usually get the Classic Box for 2 people x 5 meal kits, but since I’ve been at home recovering from surgery I decided to increase the size of our box to cater to 4 people so I have leftovers and I don’t have to cook as much. As you can see there’s heaps of variety and we’re still really enjoying the vegetarian meals! You guys would also know I never really cook Indian cuisine myself, but the sweet potato and coconut dhal was my probably my favourite from our last box and I’m definitely going to have try and recreate something similar - I even left out the onion and it was still packed with flavour 😋.

  • Accurate depiction of my happiness level right now 👆. I saw my surgeon this morning and he’s given me the all clear to start exercising again 👊. I still need to avoid running and jumping for another 6 weeks, but I am 100% OK with that and I’m not even going to try and push it 😇. It was honestly just so good to hear him say that he’s happy with my progress and feels confident that I’ll regain full strength and function of my leg 🙌. It is actually crazy how quickly I’ve started to feel better! Almost all of the neural tension I have struggled with because of the bulged disk for 7+ months is gone 😱 AND I’m already off all medication apart from anti-inflammatories. I still look about 3 months pregnant 🤷🏽‍♀️, but I know that will settle in time so I’m not even fussed about it haha. Just goes to show that going ahead with the microdiscectomy was the right decision for me 🤗. Yiiieewww! SUCH a good start to my week 🙏💃🏽 #ProjectComeBack has officially begun!

  • Whenever I hangout with Nadia one of her first requests is that I pull out my phone so that we can take selfies using Snapchat filters 😂❤️. It’s literally the only reason I keep Snapchat. She’s just too cute and it makes her so happy!!! Football also makes  Nadia really happy. She is a mad Parramatta Eels supporter! She watches every single NRL game dressed from head to toe in every piece of Eels memorabilia that she owns. Even if they’re not playing!! Hahahahaha. When I was a kid I used to feel like I kind of got cheated out of a best friend because I didn’t fully understand Nadia’s disability and just wanted her to be ‘normal’ and like everyone else’s siblings. But I honestly wouldn’t change a single thing about her now. She’s the most hilarious and loving character in my world and I couldn’t have wished for a better sister 💗. #differentisbeautiful #autismawareness #sisterlove #gettoknowme

  • Impromptu date night with SG calls for a little lippy 💞. It’s been so long since I’ve done this 🙈 and it feels especially nice since I’ve been at home for the last two weeks dressed mostly in PJs haha. What do you think of this colour? I tend to prefer cooler reds. This one is called Playful Plum by @rawwcosmetics. Feels really nourishing and I’m glad because I’ve invested a few colours! Who else likes to whip out a little lippy for a special occasion? Will let you guys know where SG ends up taking me 😘 xx

  • If you’re looking for amazingly rich and chocolaty cookies then you NEED to try this recipe ASAP. Introducing Chocolate Fudge Cookies 🍪. LIKE and SAVE this post😋!
.
INGREDIENTS:.
❇️1 cup tahini.
❇️½ cup natural maple syrup.
❇️2 eggs.
❇️½ cup almond meal.
❇️6 tbsp cocoa.
❇️1/4 tsp salt.
❇️100g dark chocolate chips.

METHOD:
❇️Step 1. Preheat your oven to 160C. In a bowl, mix together the tahini, maple syrup, and eggs. ❇️Step 2. Add the almond meal, cocoa and salt. Mix well to combine.
❇️Step 3.  Fold through chocolate chips.
❇️Step 4. Use an tbsp to scoop out the batter and arrange onto a baking sheet lined with baking paper.
❇️Step 5. Press the cookies down into round discs and bake for 15 mins.
❇️Step 6. Leave to cool completely. The cookies will firm up as they cool.
Enjoy! .

💛Note: If you don’t like that taste of tahini beware because you can definitely taste it, but I think it goes really well with chocolate. If you want an alternative try smooth almond butter or peanut butter 😊. .

  • Sunday chills with my main squeeze 🥰. Slowly starting to feel like myself again! I’m off all the painkillers that made me drowsy/nauseous and I’ve started to taper off my nerve pain medication 👊. I’m booked in to see my physio on Wednesday and I’ve got a follow up with my surgeon the following Monday once I return from the Brissy Aus fitness Show 🤗. Anyway, I won’t be prepping until I’m ready to return to work, but I’d like to start getting creative in the kitchen this week and share a couple of new recipes! Do you guys have any requests? Would you like more sweet or savory recipes? Or a mix of both?! I noticed you guys loved those Breakfast Blondies 🤤. Let me know below, friends xx

  • ✨Abs aren’t forever, but body confidence and self love can be ✨. The medication I’m currently taking has made me extremely bloated. However, I also look like this after a big meal, when I eat something I’m intolerant to and especially around the time I get period 💁🏽‍♀️. Who else is with me?! I have to admit that maintaining a flat stomach used to be a real priority for me, but I have realized that is was an unrealistic and superficial focus because despite most of the images we see online, no one has a flat stomach 24/7. Bloating is a 100% normal part of life and I’m not going to allow myself to feel ashamed about it and get caught up in the comparison game 👊. So here I am, with my bloated belly, choosing to feel proud and grateful for all that my body can do 🥰. #getyobellyout #selflove #keepingitreal

  • Back home and couldn’t be happier 🥰. I’m trying my best to take everything slow and be super kind to myself! The meds I’m on are making me feel really drowsy and I’m not even trying to fight it 😴. I’m going for short walks when I can and trying my best to make nutritious food choices and drink heaps of water to keep my bowls moving 😅 (I’ve also started drinking 1/2 glass of pear juice per day, which seems to be helping 🙏). Hopefully I won’t need painkillers after this week anyway, so I’ll just have to deal with living in this ‘dream like’ state for a little longer. Also, I’m really glad I decided to take time off work to recover. I honestly felt so guilty about it at first, but there’s no way I could have gone in feeling like this 😅. Feeling confident in my decision 💪. Anyway, I know it’s hard, but I hope this serves as a reminder to always put your health first xx

Could not be more grateful for my surgeon Dr Pope, his team and all the staff here at the Mater Hospital. They’ve made this entire experience  less daunting by being so caring and informative 🙌. Now It’s time to focus on my recovery 👊. I’ve been cleared to walk everyday 😍 (avoiding hills and stairs of course) and I can’t lift anything heavier than 5kgs or perform any twisting movements. Dr Pope would like me to see my physio in 10 days (hey @atocck 👋) and he will give me the all clear once I’m ready to start additional rehab with @samrooney_ep and the team at @iontraining . However, I’m planning to take everything super slow, being sure listen to my body and avoid any unnecessary issues. #ProjectComeBack has begun 😏🔥 #letsdothis
